Light Bites to create this Spring

As we are soon to welcome a new season, the team at JR Holland have created a list of some great, light bites to create this spring. With many new seasonal ingredients coming into harvest there are many more meals to create… Here are just a few!

 

Lemony tuna & asparagus salad box

 

Ingredients

  • 2 large eggs
  • 200g asparagus, woody ends snapped off, spears halved
  • 160g can tuna in spring water (no need to drain)
  • 1 small red onion, very finely chopped
  • 125g cannellini bean from a can, drained
  • zest and juice ½ lemon
  • 1 tbsp fresh chopped dill
  • 1 tsp extra virgin olive oil

 

As asparagus is one of the main vegetables in season this spring then why not start with creating a lovely tuna and asparagus salad box. The new take on the Niçoise. This recipe is simple as all you need to do is boil your eggs, and steam the asparagus above for around 8 minutes. Once you have this cooking, you should gently toss all the other ingredients together then arrange on a plate or keep in a container for later use – this will keep in the fridge for around 2 days.

 

Carrot and butter bean soup

Ingredients

  • 2 tbsp sunflower oil
  • 2 onions, chopped
  • 1 tsp turmeric
  • 1 tsp ground ginger
  • 1 tbsp ground coriander
  • 1 tbsp medium curry powder
  • 1¼kg carrot, 1kg/2lb 4oz roughly sliced, rest coarsely grated
  • 3 x 400g cans butter beans, drained and rinsed
  • 1.2l vegetable stock
  • 400ml whole milk
  • snipped chives, if you like, to serve, plus 2 crusty loaves

 

This recipe is also very similar, and one of our favourites as it serves 8 people! Simply put the oil and onions in the biggest saucepan and soften them for around 10 minutes. From this, just stir in the spices and add the sliced carrots with half the beans and then also the vegetable stock – cook this for around 15-20 minutes.

In order to make the soup more like a puree, use a hand blender or food processor. Then stir in the remaining beans and grated carrot with 500ml of hot water. Simmer this for a good 10 minutes. Add the milk and season to taste. Leave on low heat until ready to serve.
